Zucchini bread day!
My sister Sarah at The Starving Artist recently told me she was baking zucchini bread. I've never made it before, and I wanted to try. She used the recipe from Smitten Kitchen, so I did, too.
Of course, the photos over there are 100 times more gorgeous than mine.
I used my handy food processor for the grating part. Turns out, I didn't need three zucchini to make two cups grated. I got five cups.
So naturally, I made two batches. (The fifth cup went into some pasta for lunch.)
What do you get for two batches? One loaf (I only have one loaf pan!), 35 muffins, and 24 mini muffins.
YUM!! However, I don't recommend the minis. They're too small and not nearly as moist as the muffins. I can't wait to slice into the crusty top of the loaf.
