It's November. Christmas is coming.
November means it's time to plan for Christmas cookie baking.
I have seen numerous complaints around the internet about Christmas decorations and music already being up in stores. I think a person can plan for and enjoy Thanksgiving while at the same time plan and get excited about Christmas. That is what I plan to do.
This is my list so far. The ones with the star are new this year (I have made the gingersnaps but not for Christmas). I got a springerle rolling pin (German cookie mold in the form of a rolling pin) this summer so I'm excited to try making speculaas (Dutch spice cookie). Off the list from last year are some that were a bit more labor intensive as far as shaping them (such as pinwheel cookies) because I'm adding cut out and decorated sugar cookies. We'll see how elaborate the decorating gets because goodness, it's a ridiculous amount of work. Especially when I think I'm going to make 100. I realized that was not realistic and after a friend told me she only makes about 30, I'll do that instead of try to make one for everyone I know.
Other things I want to bake or make: gingerbread cake, yule log cake, candies, flavored popcorn, warm spicy drinks like cider or glogg (Danish mulled wine), and probably many more ideas that will come to me over the next several weeks.
What will I do with all of this? We'll have an open house again this year, some will be given as gifts and served at coffee or at church. I'm hoping to have a sweet swap with some friends as well!
In the meantime, I need to use up several things in the freezer to make room for cookies.
