Christmas Cookie Baking: Pebernødder
This weekend, the Danish Iowa towns of Elk Horn and Kimballton will be celebrating Julefest, a celebration in preparation for Christmas. I was looking at their brochure online (links to brochure toward the bottom of the page linked), and was noticing all the mentions of Danish foods. I looked them up because I didn't know what almost any of them were. One of them was pebernødder. It's like the German pfeffernüsse and not terribly unlike the pepperkaker. Pebernødder means peppernuts. They do contain some pepper, and this version is meant to be hard and crunchy like a nut. I followed this recipe. They are small. I made them by rolling the dough out into ropes, and then cutting off little pieces. They make me think of Teddy Grahams, except they're much spicier!
