Grub Sunday: Baptism Cupcakes


This month's Grub Sunday happened to fall on the same day as the baptism of our newest member, a baby girl, so I wanted to do something special. I made two kinds of cupcakes and pink lemonade punch (it didn't turn out very pink, but does contain pink lemonade). After I took these photos, the little girl's grandmother also brought candy covered strawberries, cream cheese mints, fruit, and M&Ms.


I tried to go with a polka dot motif, so I used polka dot cupcake liners, polka dot paper to make the little banner (seen above), and white pearl sprinkles on top of the cupcakes.

Chocolate cupcakes (this recipe) with vanilla frosting:


I used the whipped vanilla frosting from this site like I did with the St. Patrick's Day cupcakes. It is my current favorite cake frosting.

For the lemon ones (below, this recipe), I added a little bit of lemon zest and a little bit of lemon extract. Lemon cupcakes with lemon frosting:




I filled the chocolate ones with ganache and the lemon ones with blackberry curd (this recipe, I used frozen berries to make the juice). I used an apple corer to make the holes, piped in the filling, and put the tops back on (you probably don't nee to put the tops back on, but it was fun to do, so I did it). Next time I'll try to find something that will make a bigger hole so I can get more filling in them.
